These are all quick to prepare but elegant dishes, where the truffle pesto is the star of the plate.
Tagliatelle with Truffle Pesto
Ingredients (2 servings):
200 g tagliatelle (or any pasta)
2 tbsp truffle pesto
2 tbsp olive oil
30 g grated Parmesan
Freshly ground black pepper
Instructions:
Cook the pasta in salted water until al dente.
Drain, reserving about ½ cup of the cooking water.
Toss the pasta with truffle pesto, olive oil, and a splash of cooking water.
Serve with Parmesan and freshly ground black pepper.
Truffle Pesto Bruschetta
Ingredients (4 slices):
4 slices baguette or sourdough bread
2 tbsp truffle pesto
1 garlic clove
2 tbsp olive oil
Fresh parsley or arugula
Instructions:
Toast the bread slices in a bit of olive oil.
Rub the hot bread with the garlic clove.
Spread with truffle pesto and top with fresh herbs.
Serve immediately.
Truffle Pesto Pizza Bianca
Ingredients (1 medium pizza):
1 pizza dough (store-bought or homemade)
2 tbsp truffle pesto
100 g mozzarella
50 g ricotta or mascarpone
Fresh basil leaves
Instructions:
Preheat the oven to 220 °C (430 °F).
Roll out the dough and spread with truffle pesto.
Top with mozzarella and ricotta.
Bake for 10–12 minutes, until golden brown.
Garnish with fresh basil before serving.
Truffle Pesto Flatbread Bites
Ingredients (2–3 servings):
2 flatbreads (naan or pita)
3 tbsp truffle pesto
1 small red onion, thinly sliced
40 g goat cheese or feta
A handful of arugula
Instructions:
Spread the flatbreads with truffle pesto.
Sprinkle with red onion and cheese.
Bake at 200 °C (390 °F) for about 8 minutes.
Top with fresh arugula before serving.
